Chocolate brownies for breakfast? Yup. You heard it here and I’m giving you full permission to indulge in these delicious brownies for breakfast. They’re packed with protein, fibre, heart-healthy fats and reduced sugar. Whip them up and have them for Valentine’s Day breakfast…it will be the perfect chocolate-y way to start your Valentine’s Day.
I got this recipe from Ambitious Kitchen – such a delicious recipe! They’re also gluten-free and can be made vegan if need be.
Avocado, Black Bean Brownies*
1 (15 oz) can of black beans – rinsed and drained
1/2 of a large ripe avocado (I used 1 small avo)
1 tbsp melted coconut oil
1/2 cup unsweetened cocoa powder plus 1 tbsp
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
1/2 cup coconut sugar (or sub with brown sugar)
1/3 cup chocolate chips for topping
Preheat oven to 350 degrees F. Grease an 8×8 inch baking pan.
Place all ingredients, except for the chocolate chips into a blender or food processor (I used a blender but I think a food processor would make things easier). Process/puree until ingredients form a smooth batter.
Pour batter into the prepared pan, sprinkle with chocolate chips and bake for 25-35 minutes (I baked mine for 30). Cool completely before cutting.
*To make vegan, sub 2 flax eggs for the regular eggs.
