Sometimes all you want is a quick grab-and-go breakfast, or a mid-morning pick-me-up. Here’s a quick and easy recipe for a quick, healthy snack. Sweet, salty, crunchy, gluten-free, nut-free and vegan.
Dark Chocolate Banana Energy Bites
1 cup oats (I used gluten-free quick oats)
1/2 cup sunflower seed butter (or any nut/seed butter)
4 squares chopped dark chocolate
5 dried banana pieces
1/3 cup dried coconut
3 tbsp honey or agave (to make it vegan)
Sprinkle of salt
Combine everything in a bowl. Stir with a spoon or mix with hands. From into 1 – 1.5 inch balls.
Feel free to add other ingredients, such as dried cranberries, pumpkin seeds, chia seeds, flax seeds, dried blueberries, etc. Add extra nut/seed butter if the balls are hard to form.
Keep in an airtight container in the the fridge.
