Energy balls are basically just an easy, healthy snack rolled up to look like a Timbit.
Disclaimer: they do not taste like timbits.
They do taste good though! They’re also packed with a punch of healthy ingredients.
I used to make energy balls all the time. They’re easy to make; they’re a healthy snack alternative; and they are great to eat when you’re rushing out the door, are on the go or just need a little blood sugar boost.
I made these bad boys just a couple days ago and I think I’m close to finishing the container…!

Pumpkin Coconut Spice Balls
(gluten-free, nut-free and vegan)
12 dried Medjool dates
1/2 cup old fashioned oats (GF if you’re GF)
1/2 cup roasted pumpkin seeds
2 tbsp chia seeds
1 tsp cinnamon
1/2 tsp pumpkin spice
De-pit the dates and soak them in super hot water for 8 minutes until they become nice and soft. Drain them and place them in a food processor. Blend until a puree is formed.
Add the oats, pumpkin seeds and spices. Blend until smooth.
Stir in the chia seeds and mix until it becomes a dough-like consistency.
Scoop the mixture and roll into 1.5 inch balls. Place on a lined baking sheet and let cool in the fridge.
Once cool, transfer them to an airtight container and store in the fridge!
