Lately I’ve been obsessed with Aroma Espresso Bar’s Sweet Potato Lentil Salad (sans the granola because it isn’t gluten-free). It’s SO good….arugula, sweet potatoes, goat cheese, red onion and lentils…it’s just delicious and is the perfect meal. Don’t you hate when salads are just full of lettuce with four tomatoes, a chunk of avocado and a couple pieces of cheese…there’s no fun in it and it never fills me up. This salad though is amazing. Packed full of the fun stuff!
I’ve been wanting to replicate this salad for a few weeks now, so tonight I finally gave it a go. I made my own gluten-free granola and I added beets and pumpkin seeds. I also made a honey-dijon vinaigrette instead of a lemon vinaigrette that comes with the Aroma’s version.
Sweet Potato Lentil Salad
Serves 2 meal-sized salads or 4 side salads
2 medium sweet potatoes, peeled and diced
4 raw beets, peeled and diced
1/2 can of lentils
Arugula (I put a couple handfuls on each plate)
1/2 cup granola (I made homemade gluten-free granola)
1/4 cup roasted pumpkin seeds
1/2 package of goat cheese
1/3 cup breadcrumbs (I used PC gluten-free bread crumbs)
4 tbsp grainy dijon mustard
2 tbsp honey
1/3 cup olive oil
Preheat the oven to 375 degrees F. Peel and dice the sweet potatoes, spread them over a cookie sheet and drizzle with olive oil. Bake for 30 minutes. While the sweets are baking, dice the raw beets, drain and rinse the lentils and give the arugula a wash.
Prepare the breaded goat cheese. Slice 1/4 inch pieces of goat cheese and dip them in a bowl on breadcrumbs – careful not to crumble the cheese. Lay them on a pan lined with parchment paper and then bake in the same 375 degrees F oven for 10 minutes until the crumbs become slightly golden.
To make the dressing, simply whisk the mustard, honey and oil together in a small bowl or shake it up in a mason jar.
Once everything is baked and ready to go – serve it up! Top the arugula with all the ingredients, sprinkle some granola and drizzle on the dressing. Voila! The most delicious salad!
How delicious does this look? It was the perfect dinner…and meat-free!
